  1. Preheat oven to 350 degrees. Grease and line 3 8″ or 9″ pans with parchment paper.
  2. Sift flour, baking soda, and salt together. This is the 2nd sifting.
  3. Cream sugar, buttermilk, vegetable oil, and eggs, until well combined.
  4. Add vanilla extract, food coloring, and vinegar. Mix to blend.
  5. Sift (3rd sifting) dry ingredients into creamed mixture, gradually in 3-4 parts, until blended. Stir after each sifted addition until all the batter is red. Make sure to scrape the bottom of the bowl.
  6. Briefly beat for about 20 seconds on low speed until color is evenly blended.
  7. Pour into pans and bake for 25-30 minutes. Test for doneness with toothpick in center of cake.
  8. Cool in pans for 10 minutes then remove to cooling racks. Cool completely before frosting.
Recipe Notes

Recipe makes about 18- 20 standard cupcakes. Bake at same temperature but check for doneness at 20- 22 minutes.
